Dr Johnson O. Oladele is a lecturer and research scholar at the Biochemistry Unit, Department of Chemical Sciences, Faculty of Science, Kings University, Nigeria. He obtained Bachelor’s degree {B.Sc. (Hons)} Biochemistry from Osun State University, Nigeria; Master’s degree (M.Sc.) Biochemistry & Molecular Toxicology from University of Ibadan, Nigeria, and PhD (Biochemistry) from University of Ilorin, Nigeria. His research interests include phytochemistry, phytomedicine and molecular toxicology. Dr Oladele has a vast experience in both teaching and research. He has authored many research articles published in peer-reviewed journals and chapters in book series. He is a book editor titled “Nutrition and diet in health: Principles and Applications” to be published by CRC Press (Taylor & Francis). He serves as a reviewer for a number of journals hosted by Elsevier and Springers, and as an editorial board member of two learned peer-reviewed journals. Dr Oladele belongs to a number of national and international professional associations. As a research fellow and seasoned facilitator, he has presented some papers and oral presentations in a number of seminars, workshops, and conferences. He has also received awards and honours in recognition of his efforts, distinguished services and contributions to his career and associated organizations.

Ebenezer I.O. Ajayi is a Lecturer at the Biochemistry Department, College of Science, Engineering and Technology, Osun State University, Osogbo, Nigeria. He was a former Sub-Dean of Student's Affairs, College of Science, Engineering and Technology. He bagged his B.Sc. (2004) from the University of Ado Ekiti, M.Sc. (2008) and Ph.D. (2015) from the University of Ibadan, Nigeria. He has published 28 scientific papers, reviews and book chapters, and has served as reviewer for reputable journals. He is a recipient of many grants and awards, the most recent being a 3-year postdoctoral fellowship by the Argentinian Ministry of Science, Technology and Productive Innovation. His research interests are in the areas of diabetes complications and infectious diseases involving wound healing using biophysical and nanotechnology tools. He is a book editor titled “Nutrition and diet in health: Principles and Applications” to be published by CRC Press (Taylor & Francis).

Dr. María Liliana Flores-López obtained her Bachelor degree (B.Sc.) Pharmaceutical Chemist Biologist and a Master degree (M.Sc.) in Food Science and Technology from Universidad Autónoma de Coahuila, Mexico. She received her Ph.D. in Chemical and Biological Engineering from University of Minho, Portugal. Dr. Flores-López is Director of the Centro de Investigación e Innovación Científica y Tecnológica (CIICYT) of the Universidad Autónoma de Coahuila, and Associate Research Professor at Universidad Interserrana del Estado de Puebla Ahuacatlán (Puebla, Mexico). She is a specialist in bioactive compounds from plants. Her main research focus is the development of postharvest technologies (edible films/coatings and micro/nano encapsulates) to extend the shelf life of fruits and vegetables. Her other research project is the study of phytochemicals from native plants of Mexico as antioxidant, antimicrobial, and antiproliferative agents for their application in the agri-food industry. She is a member of the Mexican National System of Researchers and leader of the Sustainable Bioprocesses and Natural Resources research group, with numerous scientific articles and book chapters published, and she has served as a reviewer for several journals hosted by Elsevier, Springer, and MDPI. President of the Territorial Development Congress (Puebla, Mexico), 2020 and 2022 editions. In addition, she has supervised several undergraduate and graduate students.
